Bao Buns (Slow-Cooked Beef)

Tender slow-cooked beef in fluffy bao buns with pickled cucumber. A weekend favourite.

Ingredients
Beef
- •800g beef chuck or brisket
- •3 tbsp hoisin sauce (nut-free)
- •2 tbsp soy sauce
- •1 tbsp brown sugar
- •1 tsp five spice
- •3 cloves garlic
- •1 cup beef stock
Pickled Cucumber
- •1 cucumber
- •3 tbsp rice vinegar
- •1 tbsp sugar
- •1 tsp salt
To Serve
- •8–12 bao buns
- •Spring onions
- •Fresh coriander
- •Sesame seeds
Method

Combine hoisin, soy, brown sugar, five spice and garlic. Coat beef well.

Place beef in slow cooker with beef stock. Cook on low 6–8 hours or high 3–4 hours.

Make pickled cucumber: slice cucumber thinly, toss with rice vinegar, sugar and salt. Leave 30 minutes.

Shred beef with two forks. Return to sauce and stir.

Steam bao buns as per packet instructions.

Fill bao with shredded beef, pickled cucumber, spring onion and coriander.
