Chicken Schnitzel

Crispy crumbed chicken schnitzel with a tangy dairy-free potato salad.

Ingredients
Schnitzel
- •4 chicken breasts, butterflied and lightly pounded
- •1 cup breadcrumbs
- •2 eggs, beaten
- •½ cup flour
- •Salt, pepper, garlic powder
- •Olive oil for frying
Dairy-Free Potato Salad
- •800g baby potatoes, boiled and halved
- •3 tbsp olive oil
- •2 tbsp wholegrain mustard
- •2 tbsp white wine vinegar
- •2 spring onions, sliced
- •Fresh parsley
- •Salt and pepper
Method

Boil potatoes until just tender, about 15 minutes. Drain and halve while warm.

Whisk together olive oil, mustard, vinegar, salt and pepper. Toss warm potatoes in dressing.

Add spring onions and parsley. Toss and set aside.

Season flour with salt, pepper and garlic powder.

Coat each chicken breast in flour, then egg, then breadcrumbs.

Pan fry in olive oil over medium heat, 4–5 minutes per side until golden and cooked through.

Serve schnitzel alongside potato salad with lemon wedges.
