Dairy-Free Quiche (Sweet Potato & Zucchini)

Roasted sweet potato and zucchini quiche. Hearty, colourful and completely dairy-free.

Ingredients

Pastry

  • 1 sheet dairy-free shortcrust pastry

Filling

  • 6 eggs
  • 200ml coconut cream
  • 1 small sweet potato, peeled and diced
  • 1 zucchini, sliced
  • 1 onion, diced
  • 2 cloves garlic
  • 2 tbsp olive oil
  • Salt and pepper

Method

Preheat oven to 180°C. Line tart tin with pastry, blind bake 10 minutes.

Roast sweet potato at 200°C for 15 minutes until just tender. Sauté onion, garlic and zucchini in olive oil until soft.

Whisk eggs with coconut cream, salt and pepper.

Layer vegetables in pastry case. Pour egg mixture over.

Bake 30–35 minutes until set and golden.
