Poke Bowls

Fresh, vibrant poke bowls with sashimi-grade fish or tofu. Sesame dressing — no peanuts.

Ingredients

Base

  • 2 cups sushi rice or brown rice
  • 2 tbsp rice vinegar
  • 1 tsp sugar

Protein

  • 400g sashimi-grade salmon or tuna (diced)
  • OR 400g firm tofu, cubed and pan-fried
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Toppings

  • 1 cup edamame (shelled)
  • 1 avocado, sliced
  • ½ cucumber, diced
  • 1 cup shredded red cabbage
  • 2 spring onions, sliced
  • Sesame seeds
  • Pickled ginger (optional)

Sesame Dressing (No Peanuts)

  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp fresh ginger, grated

Method

Cook rice according to packet. While warm, stir through rice vinegar and sugar. Cool.

Toss diced fish with soy sauce and sesame oil. Refrigerate 10 minutes.

Whisk together all dressing ingredients.

Assemble bowls: rice as base, then arrange protein and toppings in sections.

Drizzle sesame dressing over. Top with sesame seeds and spring onions.
