Soft Shell Tacos (Chicken)

Quick, fresh and flavourful. Mild chicken with homemade guacamole and salsa.

Ingredients

Chicken

  • 600g chicken breast or thigh, thinly sliced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • Salt to taste

Guacamole

  • 2 ripe avocados
  • Juice of 1 lime
  • ½ red onion, finely diced
  • Salt

Salsa

  • 3 tomatoes, diced
  • ½ red onion, diced
  • Juice of 1 lime
  • Fresh coriander
  • Salt

To Serve

  • 8 small soft tortillas
  • Shredded lettuce
  • Lime wedges

Method

Mix chicken with cumin, paprika, garlic powder, olive oil and salt.

Cook chicken in a hot pan over high heat until golden and cooked through, 6–8 minutes.

Make guacamole: mash avocados with lime juice, red onion and salt.

Make salsa: combine diced tomatoes, red onion, lime juice, coriander and salt.

Warm tortillas in a dry pan or microwave.

Serve everything at the table and let everyone build their own tacos.
