Steak Night

Quality steak with chimichurri sauce and roasted vegetables. Simple, satisfying, no dairy needed.

Ingredients

Steak

  • 4 x 200g scotch fillet or rump steaks
  • 2 tbsp olive oil
  • Salt and pepper

Chimichurri (Nut-Free)

  • 1 cup fresh parsley, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • ½ cup olive oil
  • 1 tsp dried oregano
  • Salt and pepper
  • Note: NO pine nuts in this version

Sides

  • 500g baby potatoes
  • 2 zucchini
  • 1 red onion
  • 2 tbsp olive oil

Method

Preheat oven to 200°C. Halve potatoes, toss with olive oil and salt, roast 25 minutes.

Slice zucchini and red onion, toss with olive oil, add to oven tray for last 15 minutes.

Make chimichurri: combine all ingredients and stir well. Taste and adjust seasoning.

Bring steaks to room temperature. Season well with salt and pepper.

Heat a cast iron pan or BBQ grill until very hot.

Cook steaks 3–4 min per side for medium. Rest 5 minutes before serving.

Serve steaks over roasted vegetables with chimichurri drizzled on top.
